Thierry Marx: “We have just lost 50% of our reservations” because of the Covid-19

For several days, many restaurateurs have reported cancellations of reservations from their customers due to the spread of the Omicron variant of the Covid – 19. Same observation for the starred chef Thierry Marx in his restaurant Sur Mesure at the Mandarin Oriental in Paris:

“It is not terrible. We had a lot of reservations (for New Years Eve) and we just lost 33% of our reservations. I was full, I am not more, “he said on BFM Business on Wednesday.

“We have lost 19% of our employees”

Thierry Marx also welcomed the agreement on a salary increase of 16, 33% on average in the restoration . “It’s a good thing. Now you have to carry it as a company. You have to grow to increase wages,” he said.

According to him, this agreement will allow the sector to become more attractive after seeing some of its staff throw in the towel with the health crisis. “We had a real stall after the first confinement and when we had to reopen, we lost 26% of our employees”, recalled Thierry Marx.
